I downloaded SP4 and security updates. Now I have a bunch of ginormous compressed "uninstall" folders on my small 6GB harddrive. When, if ever, can I delete these to free up space?

You could back them up to removable media, so you could put them back when needed.

If you don't experience any problems after installing the update, you could safely delete the backup files. Doing so will remove the option to uninstall the update at a later stage (but that would only be a problem if you run into a problem with an update & would want to uninstall it).
