Well when I fitted the new GPU a few weeks ago, it was REALLY dusty, I'm talking epic proportions here, if an asthmatic had walked in the room, I've of had to drag him out.
It's definitely not as dusty as it was, I'll have a proper attack at it tomorrow.
For the moment though, I'm idling at around 30-40 on both cores. I think it's because I had been installing updates and a load of stuff for hours, I'll keep an eye on it though.

Thank you everyone for your assistance on this, if it keeps crashing, I'll be back, if not, presume the best :D
    I'll definitely recommend this site.

Sounds like you are on the road, well done. Come back and mark the thread Resolved if you feel the system is working.

Just a note to be careful with the drivers. Windows offers to provide driver updates, but sometimes it gets them wrong. You can try and install the correct ones from the original disks provided, but then you should check for updated versions at the hardware manufacturer's website.

Poor drivers can cause high temperatures.

Right, it seems that all I needed to do was have a good old clear out of dust, and do a clean install of windows - I feel rather silly now.
After having a quick clean, I noticed a slight improvement in temperatures, but nothing major. Then I noticed a thick layer of dust about half an inch thick underneath the fan (on something that looks like a radiator, so I imagine that's designed to maximize surface area and what not), after clearing that away and coughing like I've never coughed before, Skyrim was giving temperatures of about 30-50, so I think that's everything solved, no blue screens yet.
    Thank you everyone.
