RTFM. Every manufacturer has different ways of doing the same thing. Some supply you with recovery cd & others have a hidden recovery partition....
I think most of the problems that you are having are more to do with the c-r-a-p loaded by Dell than with Win 7. What you need is PC Decrapifier.

Start button, boot to desktop aren't the show stoppers for me, so I don't really miss them. I would just apply it as it updates & patches the OS.

On most modern switches yes. On some old switches there is a separate port for download/upload. That's all that is to it.
You don't need a router. A simple 8 port switch would do.

Are the 2 Seagate 4 TB drives in RAID 1 ? If so, check the RAID.
