In the 2003 version which should be the same as 2007 - you click on FILE->IMPORT and you end up drilling down to where the PST file is stored.
The import function when done properly will import all old mail, contacts and calendar events. Do you have all the old mail already imported?

All mail, contacts and calendar events are stored in a .PST file. Did you reimport your pst file? Do you have all you old email?
