I've been using Mozilla 1.7 for quite awhile now and I've always performed the manual install using the zip file. Is SeaMonkey just an upgraded, renamed Mozilla suite? Can I just replace Mozilla with SeaMonkey and have the ability to "fallback" to Mozilla if I encounter problems with SeaMonkey? I'm assuming that I can use my same profile files/directories for the browser and email clients.

    Thanks.

Seamonkey is a new path, as an option to the standalones, Firefox+Thunderbird, giving the familiar Suite.
If you can get the .zip files, great. There is nothing much to fall back. But, I suggest that you get separate profiles, or, you can try to delete the Mozilla unzipped file (you can store it somewhere, and not use it), and use the Seamonkey file. I think that you should be ok, if you do not flip flop. I have, always, used separate profiles.
