We're using an HP multi function printer and the HP Camera and Scanner Wizard which scans fine but only 1 page into a each separate document.

Is there a way to scan a 3 page doc into just 1 doc so we don't have 3 different files for each page?

Depends which multifunction unit you have and the type of documents you are scanning.

The cheaper domestic/soho multifunctions don't have a method in the HP software to scan multiple pages into one document, it has to be done with third party software - which brings me to the second point.....

If you are scanning text documents then most OCR software will allow you to compose multipage documents very quickly. If you are using Word it is fairly simple to just keep using 'insert' for every page you scan in but this will be brought in as an image. If you are trying to create PDF sets which is usual in an enterprise environment then you need Acrobat Pro from Adobe and again very easy regardless of your scanner type.

Otherwise I'd say without more specific software you're limited to C&P.

PDF Tools (freeware) will also scan docs into a TIF file, and there is an option to scan into the same TIF file you can check. Alternately, this same program will take PDF pages and merge them into one file (when you are done scanning them into separate pages).
