It seems now that I've installed a various number of programs onto my computer, when I go to run one from the start menu under the programs submenu, I can't see some of them as they are below the screen. Is there anyway to fix this?

It sounds like you have your startmenu set to scroll. There should be an arrow either on the top or on the bottom. Using this arrow will allow scrolling through the rest of the menu.

Second option is to is to use cascaded menus. This can be set via a rightclick on the startbutton. Select properties, select the customize button and then the advanced tag. There is a setting in there called "Scroll" untick it and apply or okay your way out of there.
