    Running Windows 2000.
    Tried to uninstall Office 2000
    Gave error:
"This patch package could not be opened. Contact the aplication vendor to verify that this is a valid Windows Installer patch package. "

    Tried to run Office updates:
"An unexpected error has occured"

    any thoughts?

These suggestions are nothing other than stabs in the dark and I'd suggest that you wait and see whether any better ideas are forthcoming before trying them.

Firstly, follow the steps described here to specify the path to the setup files and then try uninstalling.

If that doesn't work, try running the Windows Installer CleanUp Utility, then re-installing Office before attempting a proper uninstall (see here for more information).
