Any suggestions for anti-spam software that I can run on my server (linux)? I travel frequently so I need something that will block it at the server, so I'm not downloading 1000+ junk mails every day.

I did a search on the bulletin board (like a good kid) before posting this and checked out SpamAssassin (http://spamassassin.apache.org/) but honestly wasn't sure how to actually install it. I also looked at IhateSpam and SpamInspector, but they were not server side.

Any suggestions would be appreciated, otherwise I'll be paying my host $10/month for the rest of my days for their service...

The best server side anti-spam is BrightMail, but this is not free.
Spam Assassin is the second choice. What linux distro are you using? That is the key to "how to install" it.
