The default is 2. You can make it 1 under "Administrative Tools > Terminal Services Configuration > right-click "RDP-tcp" in the right pane > Network Adapter > Maximum Connections. "

There's a little warning note that says it's set with the default for a maximum of 2 connections.

We've grown a bit in our use of this server, and need an average now of 4-6 RDC connections, if it's possible. Is there any way to increase the maximum number of connections in Server 03?

CAL - Client Access License - A Microsoft license technology

About $80.00 each (life time fee) and I think are only sold in groups of five. Plus there is additional Terminal Server software requird for the server.

Might want to look at some of the VNC apps...

As Steve pointed out you would need to purchase cals for additional connections. 2k3 is configured with terminal services in remote desktop for administration mode. This allows up to 2 domain admins to connect via rdp. To allow non-admin domain users to connect you must install the terminal server and terminal server licensing components via add/remove programs and purchase cals from MS.
