Thunderbird works well on Windows 7.
Outlook 2007 is OK for reading emails, poor at composing html email (uses Word for html composing and html rendering).
Windows Live Mail works well enough..

After using Outlook since 2000 I just moved from Outlook 2007 to Thunderbird 3.0 - wish I had done it sooner
