Okay, I give up. Why two different versions of Firefox? Each being updated separately?

    Just a guess but...

3.0.xx is stable and only has security updates, 3.5.xxx is reasoble stable and has new developments/features/security updates.

3.0 is kept secure but no further enhancements... As I said just a guess ;)

That makes sense. Guess I'll stick with the 3.0.15 version.

I am using both 3.0.15 and 3.5.4, and prefer 3.0.15. But, I have read, somewhere, that the 3.0.x series will not be updated, in a few months. At that point, it may become unsafe to use 3.0.x. But, for now, I prefer it.

So, how do they behave differently? They both look the same. What features are different/missing?

As far as looking the same, it is a personal preference, or not. My two versions look tremendously different, but that is due to the fact that I am playing around with different themes. It has been reported that 3.5 is faster, but I find the opposite to be true.
I don't think that anything major is different. Versions of individual files are different, and there is a different number of files and folders. It is a pain to try to compare, and even less useful. As for updates, there has been an update to 3.5.5, but no equivalent update of 3.0.15.
