DVD/CD file System Types - Some help Please

    Every time I need to create a DVD or a CD to be used on somebody else's computer I run in to all sort of troubles and questions.

    I am not sure what software to use, nor what the various file system types actually means. This is mainly in respect to Data and Photos that I will pass on to someone else. I have several software programs on my PC and none really is helpful in explaining.

    I would like to know what the various file system types mean (UDF, CDFS, etc) and what should happen when I finalize a DVD or CD. I finalize them and sometimes they still cannot be read on other PCs.

    How do I get them to be read on a TV CD/DVD player?

    How do I make them compatible so that someone can read on any of the Apple/MAC PCs?

    I have XP Media Center, SP2

    Installed Software which can be used for burning on my PC:

    Media player, Media center, Sonic Record Now, Roxio DLA, Sonic MY DVD
    and some photo editors like Picasa which warn me about file system types if I use it to burn a CD/DVD.

    Which program(s) should I use of the ones I have?
    Is there some other one which is best to use and can anybody point me to a good tutorial? I have not been able to find a good one myself when searching.

    thanks but that still does not actually explain the following information that I would like. It only touches on it a little bit.
