When I type the date, say 4 September 2006, how can I stop Word putting in the American date "2006-09-04" automatically at the end? It doesn't appear as an option I can delete from within Auto Correct options.

Change your regional settings to wherever you are.
Control Panel -> Regional and Language Options.

Language and regional settings are correct - I just don't want Word to insert any dates at all.

    Oh, in that case:
Insert -> Autotext -> Autotext -> Uncheck "Show AutoComplete Suggestions "
