Programmes that start on boot up

Hi all,

I used to know the answer to this in the dim and distant past, but for the life of me I can't remember the routine.

How do i stop certain programmes loading up on boot up. It slows down the start up process and if I have to load the prgrammes up, I can always do it when I require them I would just like to have less stuff running the background. Programmes like quick time, Picasa 2, Creative Sound which loads a task bar at the top of screen, all that sort of stuff.
