In Outlook, tap F1 (opens Help), search for receipt and the instructions should fix you up.

Worth noting that most good e-mail client software (my outlook 2000 with office sp3 for example) will give a pop up warning the user who receives the e-mail that the sender has asked for an acknowledgement of receipt and asking the receiving user if they want to send one. Some software will even allow you to reject such requests as the default behaviour. That means that this system is not 100% reliable.

Personally I think receipt acknowledgement is a pain. It is a system that spammer can use to check that they've hit a valid e-mail address. I personally always reject them. The system also increases the amount of e-mail traffic because for every e-mail sent, there is a receipt acknowledgement also sent. Most people who use them tend to use them all the time so get receipts even if they're sending e-mails to the person sat next to them. It wouldn't be so bad if they were only used for important e-mails, but they aren't. Bosses tend to get upset when they don't receive a receipt - even if there is a perfectly valid reason for them not getting it.

Anyway rant over. You'll have to put it in place if your boss wants it. However, be aware that she/he may not always get a receipt.
