What people use to track constantly growing folders?

Depends on how much of what you need to track.

For instance, in windows explorer, if you right-click on a folder and select properties, it will tell you the size of the folder, how much drive space it really occupies, and the total number of files and sub folders in it.

    Also you can try ViewFolderSize.
    http://www.softmajor.com/aveselov/vfs/info.html
This is Windows Explorer add-in that add ability to view folder size as well as file size. Just install and set Explorer to Detailed view mode. You don't need to run any other utility to view size - just swith to detialed view.
