outlook express help

im not sure if this is the right site for my question but ill try anyway:

could someone please tell me how to send a private email in outlook express, i need to do it for a course im doing and cant find how to do it anywhere.

in my course it tells me to create an email message and before sending it, i have to mark it as private by going to the options header and clicking on sensitivity but i cant find that anywhere.

i have found it in microsft outlook, i thought i had to use outlook express.
