I saw a picture of the inside of a hard disk. There are 3 platters stacked on top of each other. How does the needle with the read and write heads get to the surfaces of the 2 platters under the top one?

Havn't taken one apart for some time, but I think there are separate needles (arms?) for each platter in the HD.

    hard drive

    This taken from IBM

Usually, there is one head for each disk surface on which data is stored. These heads fly at a height of two or three microns above the disk surface (one micron = one thousandth of a millimeter). Depending on the type of drive, these disks can rotate up to 10,000 RPM, which means the heads fly at speeds approaching 100 MPH. :)
