Whenever I attach pictures to emails, the file is attached to the email, but also creates an enormous embedded picture in the body of the email. This takes up an enormous amount of space and I can't figure out how to stop it from happening.

Whether an attached picture is also displayed in the body of the message depends on the settings in the recipient's email software. There's not a whole lot you can do about it other than resize the pictures you send so they aren't so huge.

    Hi Steve A and welcome.

As Miz said, you can and should resize the picture before you attach it. Digital camera pictures, especially, are way too large for easy viewing on a PC and should be reduced to 800x600 in most cases. Also a good chance to get rid of the parts that are just clutter and send the main part you wanted.

If you don't have a good, easy-to-use picture editor, Irfanview is all of that and is also free.
