I have a friend who has ALS and I am trying to make things as automated as possible for him. I have installed a speech recognition application which has worked well for him. I would like to start some programs automatically when the computer is turned on, freeing him from this chore. Is there a way I can accomplish this task?

    Relatively simple :)

Right click on Task Bar > Properties > Start Menu > Customize > Add .....

Browse for the *.exe file of the program that you want to open at start up > Next and add to the Start up Folder.

rgaleh - a suggestion re: your email address in your signature line, I would modify the email address just a little so any bots trolling for them would be confused. nvail[remove this to mail me]@ctc.net or something similar.

People could easily figure out how to send you mail but the automated snoop things would try with the whole address so it would fail for them.
