I am currently testing out a couple of mail server packages as alternatives to exchange, but want to set the server up and be able to send and receive mail across the local network.

I found in my DNS settings on the DHCP server that I can a mail exchange record, but don't seem to be able to get it right.

Whatever I do I can't send mail to the test server.

Simplest thing is to use an alternative e-mail client to your standard one. For example, if you use Outlook, use Thunderbird or Eudora for the test. Then set up the e-mail client to use the test server as its SMTP mailserver.
