Documents and Settings--lost files

I need to get back to my original user profile
settings. Had a number of files saved in
documents and settings/<orig. profile>/my documents/... which I cannot see anymore since that profile has been changed (my fault). I know these files are still on the drive, since I didn't actively delete them. How can I recover the profile and files?

Also, I originally had a simple straight boot into windows, now I'm asked for name and pass. everytime even though I've set "don't ask for passwd"

Here's my question stated another way (this is on
Win2k Professional, btw):

When a user profile is deleted, what happens to that users personal documents? Are they deleted automatically? Are they still there, but inaccessable?

If you want to see every file on a Win2kPro system, including those of old users who have
had profiles deleted but may have files still lying around, how is that done?

And, if you don't know what the deleted profile setting was, but you know the guy had files on the
system, how do you see them?

Thanks for indulging my lack of knowledge, but this is of great importance to me.
