When I go to the mail server tab to enter new information for the pop3 and smtp server, the pop3 information boxes are greyed out and will not allow me to enter anything. There is nothing pending, and I have rebooted. Any ideas?

I'm sorry to reply to a thread without being able to contribute to an answer. I do remember that when I used Calypso on XP I ran into some strange problems because it was not fully compatible. You didn't mention which OS you have, but if it is XP then you would risk nothing by seeing if Courier still has that problem. Registration for 3.5 is now free, so there really isn't any reason to not try it out. After all, it's based on Calypso., just with more features and compatibility.
It is windows xp pro - I tried to install courier but the install crashed on 2 different computers...
I think the problem I am having is because it wasn't registered and it defaulted back to calypso lite - which then disabled the ability to create a new account - and for some reason disabled the ability to change the pop server as well.
Hmm, reverting to Calypso Lite could be the case. I'm afraid my experience with Calypso began after it became freeware. I don't have any recall of doing anything special as far as registering it. It sounds like your version may be different than the one I used.
Forgive me if any of the information I say does not exist in Calypso, as the user interface was so similar to Courier's present one that I can't recall which features are program specific. In the Help .. About, would it give you any info on its state of being registered or reverted to Lite? If you were to open a mail and Help (in the compose mail's menu) .. Insert .. System Information, would that give any indication of its status?
As for Courier crashing on install, I can't say I've had that experience. Did you use the same exe on both computers? I remember rosecitysoftware's site offering mirrors (checked before posting and I see no listed mirror. However, the list of awards have banners and I can find a mirror at the first site I tried listed, download.com) ... maybe it's a possibility one of the mirrors' files were corrupted on location or during its transfer. You may have already considered this but I figure it can't hurt to mention.
If nothing else works, I'd wonder if you were to create a new mailbox (as in .box file) from it's menu, if it would let you enter new info from there. Given everything is housed in a single box file, I wonder if there is any possibility that the actual box file was corrupted in some way.
The only other thing I can think of that may possibly cause crashes would be if you have something installed that prohibits changes to the registry, or maybe the same a/v installed on both pcs. I'm not a programmer or anything so all I can do is really brainstorm and guess at possibilities. I can't speak for the ones involved in Courier's development, but if Courier genuinely fails to install on more than one specific machine, I'd think that issue would be something worth looking into.
Nothing I said is probably going to resolve your Claypso or Courier problems, but if you can make progress on any area I'd be glad to at least try to help.

The ability to change an account from POP to IMAP has never (to my knowledge) been an option. I checked calypso, courier 3.5 and the new beta. needs to be recreated as a new account. I'm not sure if this can be changed and I don't see it as a 'bug', necessarily, but a design issue. I've passed the question on, though, to get a technical assessment.
regarding 3.5, there is a separate thread on this on how to install. basically, yes, 3.5 crashes, but the install works (or has in all instances I've been aware of.) that is, the program is there under c:\programfiles\courieremail, but there is no desktop icon. I hope this helps.

I was only trying to change the information in the pop server field, which was greyed out. It would not allow for a new account either. It was a very old version of Calypso, which was unregistered and had reverted to Calypso Lite, therefore disabling multiple features.
The install from RoseCitySoftware and a few other places I tried crashed on me, however the version at download.com actually worked with no crash.
